blueberry muffins


After a long heat streak, today was finally cooler and we got a little preview of fall, my favorite time of year. These blueberry muffins made an already beautiful day even finer.

Blueberry Muffins:

2 cups all-purpose flour
1/2 cup unrefined sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup nondairy milk
1/2 cup unsweetened applesauce
2 teaspoons vanilla extract
1 cup blueberries (frozen or fresh)

Preheat oven to 375. Line a muffin tin with baking cups and spray lightly with oil.

Combine dry ingredients in a medium-sized bowl. Whisk wet ingredients in a separate smaller bowl. Add blueberries to dry ingredients and fold them in using your hands. Add wet to dry, stirring gently until just-combined, being careful not to overmix.

Spoon batter into cups, filling to the top. Bake for 25-30 minutes, turning once halfway through.

Yield: 12 muffins

  1. Ohhhh what a cutie, but dang those muffins look awesome. I love a good muffin and have some pumpkin ones on the agenda for tomorrow. :)

    And I love the railing on that porch, and the color of the paint overall. Lovely.

  2. Thank you! I'm about to post a raspberry chocolate chip muffins recipe that tastes even better, in my opinion! Yum, pumpkin. Wishing for fall (and cooler weather)?

    I love it too, though I can't take credit for it. The work of my landlord (whose wife is an interior designer and picked the colors)!
