This was my first homemade Daiya-based macaroni and cheese, AND IT WAS THE BOMB! The closest I've gotten to "real" macaroni and cheese. It's very similar to the vegan mac 'n' cheese you find in restaurants like Chicago Diner and such. So cozy in this new cold weather.
